The speciality of The Old Brothers is the Texan-inspired slow cooking, where the meat is not grilled over the fire but smoked for hours on end. With slow cooking, the meat is cooked very slowly, over a period of 8 to 14 hours. This gives it a better flavour and it's also very tender, and it's the smoker that makes all the difference.
Unlike traditional barbecues, where the meat is cooked directly on the fire, Texas barbecues are divided into two parts. The wood fire that heats the cooking chamber is separate from it. Below, it allows the meat to cook for hours without charring.
The result: meat so tender that it falls off the bone on its own, with an unrivalled flavour and softness.
